Restaurant Openings, Spring 2015
Revealing Synopsis:
Culinary empire builders of North America
are keeping busy this winter. Chef Jonathan Waxman has two major projects in
the works. Atlanta's Ford Fry and Ron Eyester both have new restaurants in the
pipe line (Superica, Diner),
while Los Angeles chefs Jon Shook and Vinny Dotolo are finally opening the
doors (Jon and Vinny's), while
in Washington DC, José Andrés is dangerously close to letting diners into
his first foray into fast-casual (Beefsteak).
While last year’s listings of
restaurants highlighted dining options that always paired locally available garden-fresh
foods concocted with the artistic panache of their chef; in 2015, partnerships are
seemingly the buzzword in North America, while Affluence in upscale dining is
happening everywhere else throughout the Caribbean and South America.

Chefs Matt and Kate Jennings left Providence, RI for Boston after 10 years at the helm of a beloved restaurant. Townsman will serve "locally driven, New England brasserie-inspired fare." The opening has been one of the citys most eagerly awaited, but they're aiming to open the first week of February.

Big name Vegas chef Alex Stratta has finally returned to his city, and he is coming back with guns blazing and several restaurants in the works. Tapas by Alex Stratta will focus on small, Spanish-style plates. The location at Tivoli Village is perhaps the most noteworthy aspect, to go off the Strip.

On the radar for over a year, chef Juan Manuel Barrientos is finally ready to throw open the doors to his first restaurant outside of Colombia South America. Eater Miami reports that El Cielo will serve "modernist Colombian cuisine" in the form of set menus. The vibe will be "rustic-meets-modern Miami" with long wood tables, white leather seating, an open kitchen, and a salon that doubles as a private dining room.

For his next New York City restaurant, Barbuto chef Jonathan Waxman has surprised the city by naming his upcoming hotel restaurant project Jams after his famed 1980s smash hit. A spokesperson told Eater recently that this new Jams will be a "a modern interpretation of Jams" with updated versions of Waxman's simple, Italian-inflected seasonal fare.

You can find good fish on almost any restaurant table in the Caribbean.
It’s almost always fresh, locally sourced and well prepared. The Kukua Beach
Club in Bavaro, is an elegant beachfront club and restaurant is popular mainly
due to its pristine station right on the sand. But it’s also a veritable
sanctuary for high-quality seafood. Kukua’s seafood-oriented menu (Italian
pasta dishes and certain beef plates are also featured) includes ceviche, fresh
conch, carpaccios and appetizers like tuna tacos, tuna salads and, naturally,
shrimp and lobster dishes.

Three beautiful and differing dining rooms and a history of fantastic food, this location has everything a weary traveler or businessman wants.
Great food and
curiously preposterous low prices, for a city that boast the most expensive and
extensive dining options in South America this chef has gone against the grain
to bring a unique distinction to Brooklyn. While South American Cuisine based
restaurants are emerging exuberantly across the USA this chef is bringing a
taste of the North America to South America.

Passarelli brings his extensive training and experiences with his other Brazilian
restaurants (See: Bistro 170 in Itajuba, Brazil) to accumulate into Sao Paulo’s
most anticipated restaurant opening. Mr. Passarelli’s chef experiences in SouthBeach, Miami, Florida, U.S.A. has also been employed here in this polished upscale
eatery. Chef Passarelli says, “all of my culinary training and cooking proficiency,
stretching from Brazil to South Beach, have played a role in the formulation of
this new menu”.

With the arrival of Kimpton's Palladian Hotel to the Belltown neighborhood comes Shaker + Spear, a seafood-focused restaurant from veteran local chef Walter Pisano and his chef de cuisine Chris Lobkovich. It will feature a "curated menu of seafood paired simply with fresh, regional ingredients," plus a 12-seat counter along the open kitchen.

Noah Goldberg calls
what he’s putting out of his kitchen “refined neighborhood food”: salmon
roulade, bone marrow pizza, duck with beets and warm pig’s head terrine are
some of the current dishes on offer. “The food is obviously different than it
used to be,” says Goldberg “but we still want to be a neighborhood
restaurant; we still want locals and tourists and whoever is in this neighborhood
to be able to come in and afford to eat here and have an experience, but
we’ve refined that experience a bit.”
The menu will change often to reflect
what’s in season, but will always adhere to the nose-to-tail and root-to-tip
philosophies that Goldberg practiced at The Feasting Room. “I feel really strongly about eating and preparing
food in a very conscientious way—not wasting anything and offering people the
full picture as opposed to just the standard stuff,” the way restaurant menus were
always created in Europe.

Giardino, The
Return of Giardino

Longtime restaurateur Umberto
Menghi, who runs two Whistler dining rooms, plans to reopen his Italian fine-dining room, Giardino, at a new Vancouver location in 2015. Originally launched in
1973, Il Giardino occupied a historic yellow house downtown for more than three
decades.
The new Giardino is scheduled to open
its doors at a nearby Hornby Street location. Area foodies can only hope that
the menu of hearty meats and uncomplicated pasta dishes complete the deal.
